Here’s another quick and delicious pasta dish that’s perfect for weeknights and is easily made into a vegan dish! The Barilla® Red Lentil Rotini is gluten-free and is only made of one simple ingredient: Red Lentil flour. That’s it! It contains 23g of protein per 3.5oz serving and is a fiber-rich pasta that also brings a bright color to your meal too. It’s an easy swap that doesn’t require any extra work.
Each serving has 23g of protein per 3.5oz serving, so this is a great meatless option. For more protein, you can add the protein of your choice to this dish, but I didn’t need it for this meal. To make it vegan, either swap for a vegan cheese or just omit the cheese altogether. Simple! Plus, it’s done in less than 30 minutes.
