Toddler Tested and Approved Sneaky Veggie Popsicles
My toddler isn’t the pickiest eater on the planet. We are pretty fortunate that he’ll pretty much try anything we give him at least once. But sometimes I still feel like he’s not getting quite enough variety in his diet. I usually sneak any vegetable into meatloaf form (he’ll literally eat even kale in a meatloaf). But the best nutrition from vegetables is in their raw form. He doesn’t enjoy those, haha. Thankfully, I found these popsicle molds from IKEA. They’re the UTSPÄDD molds and they’re only $3.99. This is crazy easy to make and even easier for my toddler to enjoy!
I like to add a variety of fruit and vegetables into the mix. For this one, I used a few strawberries, blueberries, kale, and spinach. For a little added creaminess, I added a little yogurt. You can add some sweetener to it too. I usually add honey or maple syrup to sweeten it, if I feel like it’s too sour. If the mixture is too thick, add a little water to help it along.
To keep the molds upright while I poured, I used a quart-sized mason jar. I can usually fit about 3 molds in there at a time. I like to keep the molds in the jar while they freeze so it doesn’t develop any weird air pockets. I had extra smoothie after filling the molds, so I gave it to the toddler to drink. Boom. Double dose of veggies!
I ended up with these fun, purple popsicles. He loved them. They’re full of raw fruits and vegetables making them packed with much needed vitamins and nutrients. Plus, they have the added effect of probiotics from the yogurt. I gave these to him after we had played outside (that’s why the messy shirt). He thought that he was somehow getting dessert before dinner. He ate at least two of these before dinner and another one after. Total mom win! Our other vegetable-fruit combinations are carrot-mango-pineapple and spinach-banana-apple. Let me know if you try them out!
